Mac and Cheese is good all year round, however when the temperature dips below 70 degrees, BBQ Baked Mac and Cheese is a must. This is simple. When you have assembled your Mac and Cheese according to this recipe, simply toss the finished product with ½ cup of BBQ sauce and 1 tbsp of hot sauce throw it into a casserole dish and cover it with gluten-free bread crumbs mixed with some of our Almond Parm tossed in melted vegan butter. It does not disappoint.

Steps.

  1. Preheat oven to 375°.

  2. Follow the Pure Grit Mac recipe all the way through and add ½ cup of bbq sauce, and 1 tablespoon of hot sauce.

  3. Cook pasta for 4-5 minutes, until al dente.

  4. Add noodles to the sauce, mix to combine and pour into a 9x13 casserole dish or skillet.

  5. In a small bowl, mix 2 tablespoons almond parm, ½ cup of breadcrumbs, and ¼ cup melted vegan butter. Spread evenly over the top of the dish.

  6. Cook for 15-20 minutes or until the top is lightly browned.

  7. Let cool for 10 minutes before serving. 

Tips:

Drizzle 2 parts BBQ Sauce, and 1 part The Hot Stuff over top. Add extra plant-based cheese on top for a cheesier topping.
