College football season and Fall BBQing are two of my favorite things. I have October 24th circled on my calendar; I am so glad that the BIG 10 decided to play! Stay safe Wolverines. 

As you can see from this pic of me posing with baked mac and cheese, I had a lot of fun this weekend working on a few fall recipes that are perfect for football weekends or easy mid-week mealtime. We try to create recipes that can be made with kitchen staples but there are some plant-based outliers like coconut aminos (similar to tamari and soy sauce) and nutritional yeast, but you have plenty of time to stock up on ingredients between now and this weekend.

Baked beans are honestly the BBQ unsung heroes. Not only are they delicious but they are packed with protein and fiber and like everything else - even better the next day (we like to make Baked Bean Burritos). Our recipe calls for both ketchup and BBQ sauce along with the usual suspects.

In the fall, I turn our Mac and Cheese into BBQ Baked Mac and Cheese. I simply toss the finished product with ½ cup of BBQ sauce and 1 tbsp of hot sauce, throw it into a casserole dish and cover it with gluten-free bread crumbs mixed with some of our Almond Parm tossed in melted vegan butter. It does not disappoint.

While you’re making the Baked Mac & Cheese, don’t forget to double the sauce! You can make our Queso from the mac and cheese sauce and pour it over tortilla chips with some guac and salsa, it is the perfect app.
