Shiitake Mushroom Bacon

Ingredients.

  • 1 tablespoon neutral oil - like olive oil

  • 4-5 ounces shiitake mushrooms

  • 1 teaspoon smoked paprika 

  • 1 pinch cayenne pepper (optional)

  • 1 tablespoon tamari or liquid amino

  • 1 pinch flaky sea salt (or substitute kosher salt)

Steps.

  1. Preheat oven to 350.

  2. Slice the mushrooms and toss in a medium bowl with the rest of the ingredients.

  3. Spread into a single layer on a parchment-lined cookie sheet.

  4. Bake for about 30-45 minutes or until crisp. Check on them every so often to make sure they don’t burn, but you do want them crunchy.
