The Baked Beans

Baked Beans are a BBQ mainstay. This recipe has many ingredients, but it’s easy to make. It is nearly impossible to mess it up and tastes so good.


 

Ingredients.

  • (2) 15 ounce cans navy beans (or 10 oz dried beans, cooked) (or any white bean will do)

  • 2 teaspoons olive oil

  • ½ cup small red onion, diced

  • 1 cup water

  • ⅓ cup ketchup

  • ⅓ cup Pure Grit BBQ Sauce

  • 1 ½ tablespoons apple cider vinegar

  • 1 ½ tablespoons coconut aminos* 

  • 1 tablespoon maple syrup

  • ½ tablespoon dijon mustard

  • ½ teaspoon paprika 

  • ½ teaspoon salt

  • ¼ teaspoon ground black pepper

  • 1 bay leaf

  • Pinch cayenne, to taste

*substitute tamari or soy sauce

Steps.

  1. Rinse and strain navy beans. Add 10 oz of dried beans and 20 oz of water to your InstaPot (it’s easier than you think!) Cook at high pressure for 30 minutes and let the pot naturally release. If you’ve soaked your beans overnight, cook for only 15 minutes. 

  2. In a medium bowl whisk together 1 cup water, ⅓ cup ketchup, ⅓ cup Pure Grit BBQ Sauce, 1 ½ tablespoons apple cider vinegar, 1 ½ tablespoons coconut aminos, 1 tablespoons maple syrup, ½ tablespoon dijon mustard, ½ teaspoon paprika, ½ teaspoon salt, ¼ teaspoon ground black pepper, and cayenne.

  3. Heat 2 teaspoons of olive oil in a sauté pan. Sauté diced red onion until softened and slightly transparent. 

  4. Add beans and stir. 

  5. Add sauce and bay leaf and simmer for 30 minutes. 

  6. Remove from heat. Let sit for 5-10 minutes then serve.
